Double Chocolate Cookies:
- 400g Eggs
- 600g Brown Sugar
- 4g Vanilla
- 900g Benoit Dark Chocolate 70%
- 240g Butter
- 360g Flour
- 8g Baking Soda
- 4g Salt
- 400g Benoit Dark chocolate chips 42%
Application:
- Whip eggs, brown sugar and vanilla together.
- Melt chocolate at 45C, add it to the eggs sugar mixture.
- Melt butter, add to chocolate eggs sugar mixture.
- Mix all dry ingredients together and incorporate at low speed with the previous mixture
- Add Chocolate chips and pipe.
- Baking temperature 150C , baking time 4 to 5 min (Temperature and time might vary depends on the ovens)
