Nougat slice

Chocolate Ganache :

Ingredients

  • 900g Virtue Dark Cacao Filling
  • 100g Benoit Dark chocolate 70%
  • 50g Benoit Cocoa Nibs

Application

  1. Temper the chocolate
  2. Mix with dark cacao filling
  3. Add cocoa nibs

Chocolate Nougat :

Ingredients

  • 600g Benoit Praline Hazelnut 50%
  • 400g Benoit Dark Chocolate 70%
  • 200g Roasted Pistachio
  • 100g Roasted Pecan
  • 100g Roasted Hazelnut
  • 100g Roasted Almond

Application

  1. Temper the chocolate
  2. Mix with praline hazelnut 50%
  3. Add all nuts and pour in the mould
  4. Place in the fridge to set

Assembly and Finishing

  1. After cooling, cover the chocolate nougat with chocolate ganache.
  2. Once set cut into 2cm slice.
