NOUGAT SLICE
Chocolate Nougat :
Ingredients
- 600g Benoit Praline Hazelnut 50%
- 400g Benoit Dark Chocolate 70%
- 200g Roasted Pistachio
- 100g Roasted Pecan
- 100g Roasted Hazelnut
- 100g Roasted Almond
Application
- Temper the chocolate
- Mix with praline hazelnut 50%
- Add all nuts and pour in the mould
- Place in the fridge to set
Chocolate Ganache :
Ingredients
- 900g Virtue Dark Cacao Filling
- 100g Benoit Dark chocolate 70%
- 50g Benoit Cocoa Nibs
Application
- Temper the chocolate
- Mix with dark cacao filling
- Add cocoa nibs
Assembly and Finishing
- After cooling, cover the chocolate nougat with chocolate ganache.
- Once set cut into 2cm slice.
